Break the mushroom tails, then wash well and chop not very finely.
Finely chop the onion and put it in a little oil. When it has changed color, add the chopped mushrooms and a cup of water and let it boil.
When the mushrooms have halved, and so boiled, I added salt, then finely chopped garlic and let it boil for another 10 minutes. Then I added the tomato juice, and again I let it boil for 15 minutes, at the end adding the finely chopped parsley!
I ate pieces of cold polenta! It was delicious!
