Spicy Garlic Pasta with Fried Eggs

This is the ultimate last minute meal. The trick is to cook the eggs so that the whites are crispy around the edges but the yolk is still soft, so that it acts as a sauce for the pasta.

Ingredients

  • ½ pound pasta
  • Salt and pepper
  • 2 tablespoons olive oil
  • 3 garlic cloves, peeled and chopped
  • ¾ tablespoon crushed red pepper flakes
  • 2 eggs
  • ¼ cup Parmesan cheese, grated

Directions

Cook the pasta in a pot of salted boiling water until al dente. Meanwhile, warm the oil in a small saucepan over medium heat. Add the garlic to the pan and sauté for 2-3 minutes, then add the red pepper flakes and sauté until the garlic is golden brown (but not burned).

Crack the eggs into a small bowl, one at a time (to avoid cracking any shells into the sauce) and transfer to the pan. When the whites of the eggs start to look opaque, season with salt and pepper, and then gently flip them over, taking care not to break the yolks. Cook 1 second longer and then remove from the pan. The whites will be almost fully cooked and the yolks remain runny. Transfer the cooked pasta to a bowl and top with the eggs, garlic, and Parmesan cheese— serve immediately.

We eat a lot of oats in all forms, but lately I’ve been really tired of eating them sweet. So I started experimenting with a lot of savory oat recipes which are just as satisfying but healthier. You are totally omitting out the 2-3 teaspoons of sugar you might normally add to your oatmeal.

These savory garlic oats are versatile and how! If we are going to stay friends, you have to try this out. And don’t just stick to the recipe. I’m giving you complete freedom to go ahead and explore your heart out. In fact, we may just bond over how to make oats more awesome. That could be our thing you know.

Because who doesn’t want oats with a twist for breakfast? Raising hands and jumping up and down. Guys seriously, I can’t take my eyes off that yolk!

I tried to keep them healthy with not too much cheese. An ultimate test to my self control, but if you are feeling like a dreamy, creamy bowl, go ahead and up the quantity. Or experiment. Blue Cheese maybe? Or even a little Gorgonzola? Did I hear you say yes?

Sure this isn't an overly elaborate, elegant gourmet dish, but it's fast, easy, and delicious. Will definitely make again as written.

The recipe may be delicious, but I want to slap the editors for saying "The fried eggs add extra unctuousness . . . ." What is going on with this trend of using the word "unctuous" to describe food? "Unctuousness" takes it to another whole level of cringeworthy. There's got to be a better way to say what you mean without this smarmy-sounding appropriation of a word that means, well, "smarmy." Ick.

Yummy, moist carbonara, but much as I love garlic, the raw cloves in here, even very finely chopped, was just overwhelming. I'll make this again and probably add a tiny bit of crushed red pepper, but no garlic to fight with the creamy, subtle flavors. Think Iɽ also prefer poached egg vs. fried, but if you like fried eggs, go for it!

Delicious! Hearty and very tasty. The pepper and the pancetta (I couldn't find any at the store so used regular bacon) were key ingredients. I will make this again! Made just as the recipe says except for the bacon-pancetta sub.

Dish of the Year? Just finished a 6 mo. kitchen remodel and so excited to start cooking again. First real meal? Bon Appetit's Dish of the Year. Really? It was ok. Good. Decent. But not a dish of the year unless making it 15 minutes or less with food you already have in your kitchen are part of the requirements for Dish of the Year. I may make it again for a quick weeknight meal, but was it special? NO. Oh..and can someone please tell me if they think the recipe was supposed to be with broccolini (kind of looks more like broccolini in the photo). Broccoli rabe is more leafy isn't it? A bit confused.

okay, so i used bacon and broccoli and i'm sure it is really good with the correct ingredients, but as it was this was a great easy recipe which was devoured by entire family. so, was it really 4 stars? not sure, but definitely will make it again, and will try to find the proper ingredients.

Excellent pasta recipe. I used fresh wide egg pasta that remained delightfully al dente, to my surprise. The Italian salumeria where I got my pancetta had some dried morels so I threw in a handful of these, to lovely effect. The only thing I had a problem with was keeping my fried eggs from overcooking. By the time I used them to top the pasta their yolks had set. I love brocolli rabe and found this a perfect way to use it. Bravo!!

This is on the rotation too. It is easy to make and the fried egg, while over the top, is a nice touch. I like this version of carbonara much better than other versions I have had with a cream based sauce. I had a neighbor years ago from Italy, and his carbonara was very heavy (lots of cream). I never liked that version. When I tried this, much better.

Quite yummy. I am a sucker for any pasta with egg and cheese. The pancetta was great and frying the egg in the pancetta fat was decadent. Yummy all around.

I would like to find the photo of this dish that was on the cover of the January 2009 magazine. It shows the pasta without the egg. which is how I would make it. Does anyone know where to find the other photo?

Fun dish to make - but I would not want it very often. I could not find broccoli rabe in my hometown so I ended up using kale for flavor and broccoli for texture. That may have taken away from the finished product.

Sorry but this dish did nothing for us. Okay so I didn't put the fried egg on top but I did everything else the way the directions said and I was very disappointed.

Yummy but I don't know how much the fried egg on top really adds. I didn't want to spend the extra few dollars on pancetta so I cooked this with regular bacon instead. Perhaps pancetta would have made the difference. I did love the broccoli rabe though.

What kind of pasta do people recommend? Fresh or dried? I'm not sure what "egg" pasta is.

Please just don't call this dish a carbonara! It may be good (although I personally find the fried eggs too muchp) but a carbonara doesn't have anything other than eggs, cheese and guanciale (or pancetta, as it is easier to find in the US).

I agree that the fried egg can probably be omitted for the sake of convenience, but the gooey yolk coating the pasta was worth the extra bit of timing for me. The egg/cheese sauce had a better cheese flavor than many of the alfredo recipes I've tried.

We enjoyed this recipe. Recipe of the year? Probably not. Maybe easiest recipe of the year. It was light and fresh tasting instead of heavy and greasy as with a cream sauce. I made more than the recipe called for- 12 oz of pasta, 6 oz of chopped pancetta instead of thinly sliced, and 3 cloves of garlic. I skipped the fried eggs altogether- too much cholesterol for us. This recipe lends itself to changes- basil, Italian parsley, spinach, chard, bacon, etc. Have fun!

I have to agree with the cook that called this dish "dreadful, insidpid". I cooked it two consecutive nights - thinking Iɽ missed a step the first time. After all - this was "recipe of the year". It really just had no flavor and I used good cheese & fresh pasta. disappointing!

This was pretty good. We made the mistake of using Trader Joe's chive and spinach pasta which gave the dish an "off" flavor. Will make again with PLAIN pasta.

Boil your angel hair pasta according to instructions. Meanwhile, sauté garlic in olive oil and break in a few eggs. Sprinkle the entire pan with red pepper, sea salt and oregano, and cook the eggs until they’re semi-set. “The spiced olive oil will coat them with garlicky goodness,” says Karen. Remove eggs to a separate plate and then toss your pasta in the pan. Plate up your pasta with an egg on top and then sprinkle liberally with parmesan cheese.

Capellini, Garlic, Lemon and Egg Pasta

I’m sure we all have our ridiculously easy dishes that we can fix on a lazy night in the kitchen or when we dine alone. This pasta with lemon, garlic and an egg is one of mine. The most time-consuming part of the process is cooking the pasta but if you use capellini (angel hair), it doesn’t take any time to cook once the water comes to a boil. The veggies can be chopped and sauteed by the time the pasta is done and then it’s just a matter of frying or poaching the egg.

I do use those wonderful preserved lemons I keep in the refrigerator, but if you don’t have any, you can always substitute lemon juice and zest, or even better Meyer Lemon and zest. See my Kitchen Notes for more substitution ideas. In fact there are so many things you can add to this dish because the flavors are complementary of ingredients such as chicken, broccoli, leeks, a green such as spinach or Swiss chard, or a summer squash like a yellow squash or zucchini. You could also add a little cream if that is your preference. Experiment, have fun, but most of all, enjoy!


Pasta with Fried Eggs and Parmesan

Pasta with Fried Eggs and Parmesan is a comforting dish that takes minutes to put together with just a few ingredients you probably already have on hand!

Ingredients

  • Salt For Pasta Water
  • 6 Tablespoons Extra Virgin Olive Oil, Divided
  • 2 cloves (large) Garlic, Lightly Smashed And Peeled
  • ½ pounds Angel Hair Pasta
  • 4 whole Eggs
  • ¼ cups Grated Parmesan Cheese, Plus More To Serve
  • Salt And Freshly Ground Black Pepper, To Taste

Preparation

Bring a pot of salted water to the boil.

Heat up 4 tablespoons of olive oil in a pan over medium-low heat. Add garlic cloves and cook for about 5 minutes until lightly colored on each side. Smash them around a little while cooking. This is going to really flavor the oil without overpowering it. Remove garlic and add remaining oil.

Once water is boiling, add pasta and cook to al dente according to package instructions.

While pasta is boiling away, add eggs into garlic-infused oil, still over medium-low heat. Cook until whites are set but yolks are still runny. Turn off the heat.

Drain pasta and add to the pan. Toss pasta with eggs, breaking up the yolks. The eggs will finish cooking from the heat of the pasta.

Worth Passing On

The recipe is from my aunt, who learned it from her mother, a native of Italy. It’s since been passed on to my cousins, and their children, to me and my children…and now you. It’s well worth sharing. And much as I’m prone to tinker with recipes in an attempt to lighten them up or work in more vegetables or experiment with whole-grain pasta, Butter, Egg, and Cheese should be left entirely alone. Get your added nourishment from generous salads and steamed vegetables on the side. Those Italian grandmothers knew what they were doing with this one.
