If you give up the ganache cream on top, this uncooked biscuit cake can also be made by fasting, replacing butter with margarine and milk with water.

  • 500 g biscuits (I used Petit Beurre biscuits)
  • 100 g hazelnuts, walnuts or peanuts
  • 350 ml milk
  • 60 g cocoa
  • 200 g sugar
  • 1 sachet of vanilla sugar
  • 150 g butter or margarine
  • 2 teaspoons rum
  • Ganache:
  • 200 ml liquid cream with a minimum of 20 fat
  • 200 g chocolate with high cocoa content

First, fry the hazelnuts for 4-5 minutes. You can also use nuts or peanuts.

Put the roasted hazelnuts in a bag and press them with a twister to crush them into smaller pieces.

Mix half of the crushed hazelnuts together with the biscuits broken into small pieces.

Put the sugar, cocoa, vanilla sugar and milk in a saucepan over low heat.

Stir until the sugar melts and until you get a homogeneous composition.

Add butter or margarine. Boil over medium heat for 5-6 minutes, then remove from heat.

Put the rum, mix and set aside for 10-15 minutes to cool.

After this time, incorporate the mixture of hazelnuts and broken biscuits.

In a cake form with detachable edges and a diameter of about 20 diameter put the composition obtained.

Put in the fridge while you prepare the ganache cream.

Pour the whipped cream into a saucepan and put on the fire. When it reaches the boiling point, take it off the heat and put the broken chocolate in pieces.

Let it sit for a minute, then mix well until all the chocolate melts and you get a fine icing.

Pour the ganache icing over the biscuit cake and level it on top.

The biscuit cake is kept in the fridge overnight to set.
