Strawberries are cleaned and washed well, then put in a large pot and preferably with a double bottom. Put a layer of sugar and a layer of strawberries and simmer. Add the lemon juice and mix carefully, so as not to crush the strawberries. When it starts to boil, the leftover foam accumulates. I left it on the fire for about 2 hours. Test with a little jam left on a plate to cool to see if it is done or should be left to boil. You can also check by dripping a bean of jam on a plate and you will notice the consistency.

After the fire is stopped, put the hot jam in jars and close the lids tightly. Wrap the jars in a thick towel and leave to cool.
