Mexican-Style Brown Rice with Avocado

Progresso Broth

tablespoon vegetable oil

cup red bell pepper, diced

garlic cloves, finely chopped

cups Progresso™ chicken broth
1
cup frozen corn kernels
1
cup black beans, washed and drained

tablespoons tomato sauce
1
tablespoon cilantro, finely chopped

Heat oil in frying pan on medium heat. Add onion and bell pepper, sauté for 3-4 minutes or until soft. Add garlic and sauté for 1 minute. Add rice and combine with other ingredients.

Add broth, corn, beans and tomato sauce; mix well. As soon as most liquid has been absorbed, reduce heat and cover with lid. Cook until rice is al dente, about 15-20 minutes.

Sprinkle with cilantro and serve with avocado.

- Add 1/4 teaspoon cayenne pepper for a touch of heat.
