It's the first time I make muffins, I found the recipe on the box of candied fruit and I wanted to try ....... I don't know if it should have grown so much .... maybe I don't have a good oven .... :(: (But instead they were good.

RECIPE PREPARATION Mini Muffin with Candied Fruits (berries):

Beat the soft butter with the sugar until creamy.

Add eggs one at a time, then flour and baking powder. Continue chewing.

After we have finished the dough, we pour it into a 24 cm detachable tray, lined with baking paper only on the bottom, and we grease the edges with oil and sprinkle a little flour, so that it does not stick, then we put the tray in the preheated oven. for 35-40 minutes or most certainly we do the test with the toothpick or the skewer stick (in my case: D)

When the countertop is ready, close the oven and leave the tray there with the door ajar so as not to suddenly cool down, otherwise you risk leaving it.

When it has cooled completely, we take it out of the tray, on the edges we use a knife, then we cut it in 3 horizontally.

Foam is nougat:
We hydrate the gelatin in cold water.
Mix the yolk with the nougat, which I cut very finely, until it becomes a paste. Over this paste, add the liqueur and mix a little more.
Heat the liquid cream as long as it is warm and add the gelatin sheets in it, mix well until all the gelatin melts. Pour over the nougat composition and mix.
Put the nougat paste over the whipped cream and mix until it becomes a good cream to put on the cake.

Cherry foam:
Hydrate gelatin in cold water.
Mix the yolks well with the sugar until they become whitish in color, then add the milk (warm to hot) in a thin thread and mix vigorously.
Transfer the composition of eggs with milk in a kettle and put on the stove over low heat, stirring constantly until the composition thickens. After it has thickened, set it aside and let it cool. After the composition has cooled, add the sour cherry and gelatin, which I put in the microwave for a few seconds.
