Glad you asked! Vite Kitchens was started by twin brothers Tim and Tom Zheng and has grown to a company of just over a dozen people. We’re a small business in Vacaville, California, making and packaging our own noodles and running our business in a way we can be proud of.

We believe in paying living wages, giving healthy amounts of PTO and no questions asked days off for mental health. It's extremely important to us that our employees are treated fairly and that our ramen isn't made at the expense of the people who make it.

About Ganko Ittetsu Ramen

Throughout Japan, nearly every region has its own variation on their own styles and flavors of ramen. Ganko Ittetsu Ramen is pleased to serve Sapporo style ramen. The City of Sapporo is the largest city on the northern Japanese island of Hokkaido. Sapporo and Boston share similar climates. Summers are generally warm but not humid, and winters are cold and very snowy. With that in mind, we thought it made perfect sense to provide Sapporo style ramen to the New England area.

So, what is so special about Sapporo ramen?

Every bowl of Sapporo ramen soup is made in the wok. The typical ramen is made by simply mixing tare (sauce) and the base broth in the bowl then adding noodles and toppings. Instead, our tare (sauce) is caramelized with vegetables, then we add the base broth. This method requires extra steps and skills however, by cooking in the wok, higher temperatures can be maintained and it creates a deeper, more aromatic flavor. We want to make each customer happy with our ramen.

Dashi (Broth)

Our homemade TONKOTSU and CHICKEN DOUBLE SOUP is carefully prepared by cooking the Tonkotsu, a flavorful Berkshire pork, and chicken at different temperatures to bring out the most flavor in each. The pork is cooked at a high heat and then left to simmer, while the chicken is kept at a low temperature and cooked to perfection. Once cooked, the pork and chicken are combined, making a traditional “double soup” that will leave your taste buds tingling.

Tare / Kaeshi (Sauce)

Tare/Kaeshi is a strong, salty flavored sauce made of shoyu (soy sauce), miso, shio (salt), and other flavors that determine the ramen’s ‘type.’ Our chef, Ken Iwaoka, traveled to Japan to familiarize himself with the different types and then carefully hand-picked the soy sauce and miso. Because our soy sauce and miso are imported exclusively from an old Japanese micro-brewery, our Tare/Kaeshi gives an authentic and original Japanese flavor to the ramen.

Men (Noodle)

We are proud to serve Nishiyama Seimen Noodles. They are one of the oldest and most sought-after Sapporo ramen noodle manufacturing companies in Japan. Nishiyama Seimen was established in 1953. Since the very beginning, the company has always worked with chefs to produce custom-made, fresh, and flavorful noodles for each ramen restaurant. Because of their experience, knowledge, and expertise, they are capable of making more than 300 types of customized noodles. Our chef, Ken Iwaoka, stood in their test kitchen with the ramen noodle professionals and then our custom-made, silky, and resiliently textured noodle was born. We took full advantage of Nishiyama Seimen’s vast talent to customize our noodles to fit Ganko Ittetsu Ramen’s flavor profile.

History (of Sapporo Ramen)

The person who introduced ramen in Sapporo was Chinese chef, Wang Wencai, at the Takeya restaurant that opened in 1923. At that time, he was serving light chicken broth with a shoyu (soy sauce) flavor. However, in the 1940s, the war changed everything. At first, ramen had essentially disappeared it was a victim of rationing and the idea that there was no time for frivolous luxuries like eating out. After the war ended in 1945, ramen slowly became popular again.
In 1946, Sapporo style ramen was reborn with a thicker pork broth made by Kanshichi Matsuda at Ryuho restaurant, and then also in 1947 when Chef Senji Nishiyama used it at the Daruma-ken restaurant. Chef Nishiyama’s brother was the founder of the Nishiyama Seimen Noodle Company in 1953. In the beginning, the main flavor was just shoyu (soy sauce) and shio (salt). However, in 1954, the customer asked Chef Morito Omiya at Aji-no-Sanpei (originally opened in 1950) to dump some noodles in his miso and pork soup. Thus, a new classic was born: the famous Miso Ramen. Since then Miso Ramen has been the Sapporo style signature ramen. Aji-no-Sanpei has never closed its doors and they have been serving the same recipe since 1954.

Meet the novice noodle makers reinventing instant ramen

SAN FRANCISCO — Two entrepreneurs with roots in the Asian food scene are setting out to reinvent the instant ramen category.

Kevin Lee grew up eating noodle soup for breakfast at his grandparent’s rose apple farm in Taiwan. Kevin Chanthasiriphan grew up eating at his grandparent’s egg noodle hawker stall in Thailand. The two met while working at a tech company in San Francisco, where they bonded over their shared love of noodles.

“We both grew up eating a ton of ramen,” Mr. Lee said. “I think that was the first food we learned to make.”

The two Kevins founded immi, a line of low-carb, high-protein instant ramen.

“As we've gotten older, we've seen both of our direct families undergo chronic health conditions,” Mr. Lee said. “My grandmother is pre-diabetic, for example, and both of my parents have taken medication for high blood pressure for many years. We realized there was an opportunity to take our family backgrounds and build a better-for-you Asian American food brand.”

The pair researched the instant ramen category and found sales of the classic dish have declined in recent years. The $42 billion global industry is controlled by a handful of Asian conglomerates who have sold the same high-sodium, preservative-filled instant ramen for decades, Mr. Lee said.

“The largest instant ramen conglomerate was finally forced to change their recipe three years ago, and all they did was reduce their sodium by 15%,” he said. “Consumers have drifted away from this convenience category because of its negative health effects.”

Mr. Lee and Mr. Chanthasiriphan saw a clear opportunity to revitalize the category for modern, health-conscious consumers, but neither had experience making noodles.

“The first thing we did was watch YouTube videos on how to make noodles,” Mr. Chanthasiriphan said. “Over time we started to get into more technical specifics. That involved downloading a bunch of research reports to understand noodle manufacturing requirements and what kind of interesting ingredients we could use in our recipe. We ended up filling our pantries with tons of different proteins, fibers, gums—anything that we saw mentioned in a report.”

The pair experimented with more than 200 recipes, evaluating trade-offs in taste, texture and nutrition, before landing on a noodle made from a blend of plant proteins.

“It’s not quite as smooth as flour,” Mr. Lee said. “It has a slightly different texture, more akin to buckwheat or edamame noodles. On the box, that means much cleaner and higher quality ingredients. We also wanted to capture the deep, rich flavor of certain Asian broths but with a much cleaner nutritional profile, so we had to do a ton of research into what we chose to use in our soup packets.”

Available in tom yum shrimp, spicy beef and black garlic chicken flavors, immi’s keto-friendly instant ramen contains 9 grams of net carbs, 31 grams of protein and 9 grams of fiber per serving. All three varieties will be available online through immi’s direct-to-consumer platform beginning Jan. 5.

Prior to launching, the pair posted in low carb and keto subreddits, posted in Facebook communities and posted recipe videos on YouTube to spread the word. The posts generated a wave of interest online. By the end of 2020, more than 35,000 consumers had joined the company’s waiting list.

“We’re scrappy founders,” Mr. Lee said. “We both grew up in families who (immigrated) here to America with very little, and we've taken a similar approach here.”

The two Kevins are aiming to grow their audience and continue perfecting their recipe following the initial launch in January. Retail expansion and new flavor varieties may be in store for the future.

“This year is going to be about constantly improving our product,” Mr. Chanthasiriphan said. “People tell us they love instant ramen but always preface it with, ‘I feel guilty every time I eat it.’ Now, they don’t have to feel that shame and that guilt.”

Honkaku (Authentic)

If you can't get to a good ramen shop, due to social distancing or because there simply isn't one near you, Ramen Hero makes for a nice treat.
